Necessity is the mother of invention… Freezer Burn Soup

This is my freezer---all clean and cleared out!
I started by re-potting plants. I managed to get dirt all over the place, but my green lovelies are looking much better. I’m also starting a few African violets, originally from plants that my grandfather owned. The secret is benign neglect and the perfect window, but most people don’t know that, so they are so they are impressed by my constantly blooming violets.

From then I moved to cleaning out the refrigerator and freezer. Good news, I found the source of the odd smell: that cut up hog maw (pig stomach) I posted a few weeks ago. I thought they looked bad before……eeewwww.

As part of the cleaning, I am creating a new dish, which I shall call Freezer Burn Soup. Anything that’s been in there too long, is about to become stock. Get a pot of boiling water and drop in anything that’s been in the freezer too long. I actually keep a plastic container for chicken bones, left over vegetables and the like just for this purpose, so that’s what I started with. From there it’s an archeological dig. No idea when I purchased that frozen ball of French cut green beans, nor the half cup of carrots in a zip lock baggy. That pork roast must have been before Thanksgiving. And a single serving container of soup from… well….hummmm….hard to say. OOooo a muffin! Well, not for the soup….and a few items form the fridge go in too, like those herbs that looked so fresh…2 weeks ago.

Just so we are clear, the hog maw did NOT go in the soup.

Once I’m done with the stock, I’ll use the (still mostly) fresh vegetables from the refrigerator and a couple items from the freezer to make soup—onions, white potatoes, the last sweet potato from the batch my mother gave me at Christmas. I’ll add in some of the plum wine that we didn’t like drinking, but the bottle was sooooo pretty (of course, that’s how I choose my liquor, pretty bottles!) It might make the stock seem complex (which is to say, you’ll taste it and ask, “What’s in this?” It’s supposed to be a good thing.)
I am convinced that soup was invented to use up whatever food was lying around going bad. In times of famine, cooks used everything available and didn’t waste a scrap. I know we aren’t in a famine (OK, not on my block, anyway) and judging by my waistline, I could do with throwing out more food. But I just can’t do it. I was raised to use everything. My frugal, Depression era, grandparents would spin in their graves otherwise!

Now, of course, they can just lie there an chuckle at me while I make soup.
